  • 10g butter
  • 600g rhubarb, cut into 1 to 2 cm slices
  • 60g dark brown soft sugar

  1. Melt the butter in a saucepan over low heat. Add the rhubarb and sugar. Cover and simmer over low heat for 25 minutes. Stir regularly.
  2. Serve the compote with creme fraiche or whipped cream.

It was awful and sad. The vinegar overpowers everything.

I agree with Debbie. This turned out kind of weird actually. Why add the vinegar? It’s possible there was something wrong with the rhubarb, but I really think it was the vinegar.

I love rhubarb and had great hopes for this recipe. Unfortunately, in my opinion, the vinegar makes it taste bitter and ruins it. I added some extra sugar, but the bitterness remained.

Easy to make and delicious! I doubled the batch because of how the bundle was sold.

Recipe Summary

  • 1 3/4 pounds rhubarb, ends trimmed, cut crosswise into 3/4-inch pieces (about 6 cups)
  • 1 cup sugar
  • 1 piece (1 inch) fresh peeled ginger, finely grated

Stir together rhubarb and sugar in a large saucepan (off heat) let stand until rhubarb releases some liquid, about 10 minutes.

Bring rhubarb mixture to a boil over medium-high heat, stirring occasionally. Reduce heat simmer, stirring occasionally, until rhubarb has broken down but some whole pieces remain, about 5 minutes. Remove from heat.

Place ginger in a fine-mesh sieve set over a small bowl. Press down firmly with a spoon until juices are released (to yield about 1 teaspoon). Discard solids. Stir ginger juice into rhubarb mixture.

Let sauce cool completely before serving over ice cream, yogurt, or pound cake, or using to make parfaits.

Recipe Summary

Mix rhubarb and sugar in a 9- by 13-inch baking dish and spread level. Cover dish tightly with foil.

Bake in a 350° regular or convection oven until rhubarb is very soft when pierced but just holds its shape, about 45 minutes (35 in convection oven). Serve warm or cool.

Quick rhubarb ideas: Our compote is great in simple desserts or drinks. Here are some of our favorites.

Strawberry-rhubarb fool: Stir together chilled compote, sliced fresh strawberries, and unsweetened whipped cream spoon into bowls and chill 2 hours.

Rhubarb-orange parfaits: Layer compote with orange segments and vanilla ice cream in tall glasses. Top with a few shreds of orange peel.

Rhubarb sandwich cake: Split a sponge cake horizontally and spoon compote between the layers, using a slotted spoon sprinkle cake with powdered sugar and serve with whipped cream.

Rhubarb mimosas: Pour the compote through a fine strainer (reserve fruit for other uses) add a little of the syrup to glasses of prosecco or sparkling wine for a blushing-pink drink - perfect for a bridal shower.
