Mexican Wedding Cakes

Ingredients

  • 1 cup (2 sticks) butter, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup pecans, toasted, coarsely ground
  • 1/8 teaspoon ground cinnamon

Recipe Preparation

  • Using electric mixer, beat butter in large bowl until light and fluffy. Add 1/2 cup powdered sugar and vanilla; beat until well blended. Beat in flour, then pecans. Divide dough in half; form each half into ball. Wrap separately in plastic; chill until cold, about 30 minutes.

  • Preheat oven to 350°F. Whisk remaining 1 1/2 cups powdered sugar and cinnamon in pie dish to blend. Set cinnamon sugar aside.

  • Working with half of chilled dough, roll dough by 2 teaspoonfuls between palms into balls. Arrange balls on heavy large baking sheet, spacing 1/2 inch apart. Bake cookies until golden brown on bottom and just pale golden on top, about 18 minutes. Cool cookies 5 minutes on baking sheet. Gently toss warm cookies in cinnamon sugar to coat completely. Transfer coated cookies to rack and cool completely. Repeat procedure with remaining half of dough. (Cookies can be prepared 2 days ahead. Store airtight at room temperature; reserve remaining cinnamon sugar.)

  • Sift remaining cinnamon sugar over cookies and serve.

How Mexican Wedding Cakes should look

These are actually the same dessert, just with a few different names. You may also hear them referred to as snowball cookies or Italian wedding cookies. “Snowball cookies” are named for the layer of confectioner’s sugar on the outside of the cookie. About Flavored Oils

"Light oils infused with the flavors of herbs, spices, and fruits are a refreshing and more healthful alternative to butter and other fats. Flavored oils are simple to make and add depth of flavor as well as moisture and a sensual touch to finished dishes. They are not for cooking but for seasoning, just as you would drizzle olive oil over vegetables, noodles, or pastas. The purest and easiest technique is a cold infusion-such as Portuguese Chili Oil). Allow 1/2 to 3 tablespoons per serving. Flavored oils must be refrigerated, and most will hold their quality for at least 1 month. Prepare only as much as you will use in that time. For optimum flavor, bring the amount of oil you will be serving to room temperature. Leftover warmed oil that has been prepared with fresh (that is, not dried) ingredients must be discarded."

Orange Oil

This recipe can be found in the Joy of Cooking's Condiments, Marinades & Dry Rubs chapter.

Drizzle over poached shellfish or grilled fish, chicken, or vegetables just before serving. You may substitute lemon, lime, grapefruit, or a combination of zests for the orange zest. Use these proportions to make an infused oil with any fresh ingredients, unless they are unusually bland or strong. You may have to experiment with amounts-or infuse for a shorter time do not leave fresh ingredients in oil for more than 4 days.

Combine in a dry, scrupulously clean 8- or 10-ounce jar:

Grated zest of 3 oranges, about 1/4 cup 1 cup mild olive, walnut, peanut, or other mild oil

Cover and shake the jar gently, then steep in the refrigerator for up to 4 days. Strain through a dampened paper coffee filter (paper towels can taste of chemicals). Keep this oil covered and refrigerated for up to 2 weeks, then discard.

Mexican Wedding Cakes

About 5 dozen 1-1/4 inch cookies

This recipe can be found in the Joy of Cooking's Cookies chapter.

In Mexico, where they're often served at weddings, these are known as Pastelitas de Boda, or Little Wedding Cakes. They are also known as Pecan Butter Balls.

Position a rack in the upper third of the oven. Preheat the oven to 350 degrees F. Grease cookie sheets.

Toast, stirring occasionally, in a baking pan until lightly browned, 5 to 8 minutes:

1 cup coarsely chopped pecans

Set aside to cool completely, then grind until very finely chopped but not powdery or oily. Beat on medium speed until very fluffy and well blended:

1/2 pound (2 sticks) unsalted butter, softened
1/4 teaspoon salt
1/2 cup powdered sugar
2 teaspoons vanilla

Gradually beat the pecans into the butter mixture. Sift over the top and stir in until well blended:

Pull off pieces of the dough and roll between your palms into generous 1-inch balls. Space about 1-1/4 inches apart on the sheets. Bake, 1 sheet at a time, until the cookies are faintly tinged with brown, 12 to 15 minutes rotate the sheet halfway through baking for even browning. Remove the sheet to a rack and let stand until the cookies firm slightly. Transfer the cookies to racks to cool completely. Roll the cookies until coated all over in:

The BEST Snowball Cookies As I’ve mentioned before, no one cooked in my family while I was growing up. We had a very small handful of “family recipes” that were rarely cooked. The rest of the time, it was all about meals of convenience. I grew to love the ladies in the Carl’s Jr drive through. And while I hate to point fingers buuuuuut my grandma was typically the worst cook of them all. And she actually liked cooking she just stunk at doing it. Like the time she microwaved a Wendy’s cheeseburger inside of its foil wrapper. I warned her that foil + microwave = flammable disaster, but she continued to microwave that death trap until it exploded into a predictable burst of char-grilled burger flames. Or the time she brought us a plate of marshmallow brownies. I distinctly remember opening the door and seeing the paper plate filled with gooey, marshmallow-studded brownies and I could actually feel my eyes light up like a cartoon character. As I took a bite, anticipating the sweet, luscious goo from the marshmallow pockets, I was instantly greeted with a terrible punch in the taste buds that contorted my face into the most hideous expression imaginable that mimicked the pain I was feeling all over. That wasn’t marshmallow — it was sour cream. And grandma, bless her terrible-chef heart, neglected to stir the sour cream into the batter properly, leaving pockets of the rancid tang throughout the precious brownies. Not to mention the countless rolls that have been torched, cookies that turned Cajun, and grilled cheese sandwiches that were topped with *shudder* mayonnaise. Like, I’m still scarred. HOWEVER. Grandma did do something right, and that was her Snowball Cookies. In our house, we call them Snowballs, but you may know them as Russian Tea Cakes or Mexican Wedding Cookies. Same difference! They’re all irresistibly tender pecan cookies rolled in powdered sugar and they taste like heaven. And if we’re being honest, they’re actually my favorite cookie ever. Like, ever-ever. I could eat an entire batch without so much blinking, they’re that much of a favorite to me! And Christmas isn’t Christmas without them. While this is not my grandma’s recipe (frankly, she hasn’t made her cookies in years and I think it’s probably from a magazine), it is my favorite Snowball Cookie recipe EVER. It yields the most tender, melt-in-your-mouth, divine cookies, studded with pecans and a hint of vanilla in every bite. It makes a little over two dozen, which is excellent if you’re gifting them off (and not so much if you’re eating them all like me). You can also adapt these to make them more personalized, like by using more cinnamon inside to spice them up, adding a hint of orange zest, or rolling them in cocoa powder instead. I’ve been making these cookies for years. They’re a favorite in my house. Instead of using dried cherries I use Craisins that I rehydrate with either warm orange juice or hot water. Let sit for a few minutes , drain well, and pat dry. I usually double or triple the recipe and freeze some of them. How can anyone say they didn’t like this recipe if they changed so many ingredients.

This recipe is delicious and very easy to make! I got 59 cookies at 1 tbsp. Next time I make them I will use 1/2 tbsp. They are very rich, so smaller could be better.

I made these and the pecan Mexican wedding cakes on this site and have a couple of comments. They taste absolutely wonderful, especially these with the cherries and pistachios. The other recipe calls for refrigerating the dough for 30 minutes. This one doesn't and I would agree that it absolutely doesn't need cooling. As dry as these are, once cooled, they can't be rolled. Next time, I'll bake them immediately after mixing. Some reviewers have suggested adding more oil. Iɽ agree. I melted 1/4 stick butter and added it to these and it made what was just crumbs hold together long enough to bake. The powdered sugar is a mess and, since I'm making these for an actual wedding, that matters. I rolled some in sugar before baking and others after to see which I liked better and I think that rolling before will work better when the occasion is a formal one. All that being said, these are the richest cookies I've ever eaten. It was hard to finish one, they were so rich. But they were sure good.

these cookies are amazing, but for some reason I always end up with only about 48-50 cookies instead of the 80 the recipe is meant to yeild. has anybody else had this problem of am I doing something wrong?

I made these for my son's Spanish class. The teacher loved them! They were tender and the cherries added a tartness to balance the sweetness of the powdered sugar. Very good. I will make them again.

Very yummy! I was unsure how they would turn out after reading mixed reviews, but was happy to find they turned out wonderfully! I followed the recipe exactly except that I baked for only 13 minutes. The dough is crumbly after adding the flour, but found that didn't make any difference since the dough needed to be formed into footballs anyway. One level tablespoon of dough makes a perfect two bite cookie. When making again, I'll omit the teaspoon of salt. The cake flour adds enough saltiness.

I made this recipe for a work party and used whole wheat cake flour and did not add the pistachios and cherries/cranberries. Instead I put a little cinnamon in the coating. Everyone raved.

I made this cookie, listening to some of the advice. I added chocolate to this. i soaked hte cherries in vodka. I didn't have cake flour so just used all regular flour and reduce amt to convert to cake flour. I didn't have problems with coming together. These are very good. I thought these were wonderful. The dough is a bit crumbly, but I think it is supposed to be -it's more like pastry dough than cookie dough. If you squeeze it into shape with your fingers, it will come out just fine!

  • 2 ounces raw pecan halves (1/2 cup 55g)
  • 1 1/2 ounces powdered sugar (1/3 cup 40g) (see note)

  • 4 ounces cold unsalted butter (1 stick 110g), cut into 1/2-inch cubes
  • 1 teaspoon (5g) vanilla extract
  • 1/4 teaspoon (1g) Diamond Crystal kosher salt for table salt, use half as much by volume or use the same weight
  • 1/8 teaspoon ground cinnamon
  • To Finish:
  • 2 ounces powdered sugar (1/2 cup 55g), divided (see note)

For the Dough: Adjust oven rack to lower-middle position and preheat oven to 350°F (177°C). Combine pecans and powdered sugar in a 10-inch stainless steel skillet and toast in oven until fragrant but not deeply browned, 12 to 15 minutes. When pecans and sugar have cooled to room temperature, combine with flour, cold butter, vanilla, salt, and cinnamon in the bowl of a food processor. (Save the skillet for step 2.) Pulse until pecan pieces disappear, then continue pulsing to form a stiff dough.

To Finish: Sprinkle about half of powdered sugar into skillet, then divide dough into 20 half-ounce portions (I use a #60 scoop). Tumble each piece in powdered sugar until fully coated and roll into a ball. When all pieces have been rounded up, shake skillet so the cookie dough rolls around, collecting more sugar. Arrange on a parchment-lined half sheet pan and bake until puffed and firm, about 18 minutes. Cool to room temperature directly on sheet pan and sift remaining powdered sugar on top.
