RECIPE PREPARATION Garlic juice:

Peeled garlic cloves, mix with salt until they become like a cream. Add the vinegar and mustard. Mix a little more, then add the yolk. Gradually add the oil, as in a regular mayonnaise. Finally add the sour cream.


How do we prepare the sarmuzac recipe or the garlic mayonnaise sauce?

  1. The garlic must be cleaned, then crush it.
  2. Add a teaspoon of salt and grind the garlic. We grind it until it becomes pasta.
  3. Over the obtained paste we add sunflower oil, little by little, while stirring vigorously, just like mayonnaise. The oil must be added gradually, carefully, because the sauce can be cut, just like mayonnaise.
  4. When we have finished adding the oil, add a tablespoon or two of vinegar, to taste. Mix the sauce again very well.
  5. Sarmuzac is ready when we get a texture similar to that of mayonnaise and the spoon is stiff.

Some tips from Gina Bradea:

-It can be done with a mixer or with the robot, but it seems finer to me garlic mayonnaise handmade.

-You can make sarmuzac with tomatoes, hot peppers, there are other options. I will return with a version of spicy sarmuzac from Isaccea, a delicacy that is served with fish soup.

If it is cut, how to repair sarmuzac or garlic mayonnaise sauce:

-Add a tablespoon of hot water and mix vigorously.

-Or grind another 2-3 cloves of garlic, grind and add little by little the chopped sarmuzac.

Preparation method:

1. Allow the butter to soften at room temperature, and the garlic is cleaned, cut in half and the germs are removed from the middle.

2. Then put the garlic in a metal strainer and place it on a pot of water on the stove. Leave for 5 minutes from the moment the water boils and then set aside.

Garlic sauce with vinegar

Ingredient:

5-6 cloves of garlic
half a teaspoon of coarse salt
1 teaspoon of honey
1 tablespoon oil
1-2 tablespoons of vinegar - preferably apple cider vinegar or balsamic vinegar

Method of preparation:

Put half a teaspoon of coarse salt and a teaspoon of honey on the garlic cloves. Rub well until a paste is obtained. Then put a tablespoon of oil and rub until smooth. At the end add 1-2 tablespoons of apple cider vinegar and mix well.


Garlic cures

Anyone should know these ways to use garlic for therapeutic purposes:

• Warts and small cysts . The growths are rubbed well with a clove of raw garlic cut (with the cut and juicy side). The treatment is done several times a day.

• Swollen lymph nodes . Crush a clove of garlic and mix well with olive oil. The obtained paste is applied on the lymph nodes and massaged lightly.

• Ear pain, toothache . A tampon soaked in garlic juice is inserted into the ear. In case of caries, grated or crushed garlic is inserted inside the tooth or tooth decay. Or use garlic oil. Do not postpone going to the dentist! Garlic can relieve toothache, but it does not cure tooth decay.

• Weakness, lack of vigor . The same treatment as above is recommended. It's just that this time the spine is being massaged.

• Laughs . The same treatment is applied as above, except that instead of oil you can sometimes use water mixed with clay.

• Disinfection of wounds and ulcers . Mix garlic juice (10%) with alcohol (1-2%) and rub.

• leave overnight, and the next day mix the whole mixture in a blender or food processor
• strain and drink only water (ie garlic maceration)
• it is recommended to start with 1 clove of garlic a day, gradually increasing the dose as the body gets used to it.

Fried fish with Garlic Mujdei

step 1. We clean well, wash the fish and portion it. We salt it and leave it for 10 minutes.

step 2. In a flat plate add corn flour.

step 3. In a well-heated pan add the oil.

step 4. We pass the fish through corn flour, on one side and the other so that it is covered very well.

step 5. Put the fish pieces in the pan and let them fry without a lid. After about 10 minutes we try to turn it over to see how much it has browned.

step 6. When the fish is well browned on one side, turn it on the other side and cook it until it is well browned.

step 7. When the fish is ready, take it out on a plate and let it cool a bit until we prepare the garlic sauce.

step 8. In a pan add 8 tablespoons of plain water, 1 tablespoon of oil, a little salt and crushed garlic. Stir until it boils and turn off the heat.

Garlic sauce with sour cream - step by step recipe


In his gastronomic journey across the country, Radu Anton Roman could not help but stop and pay attention to one of the most popular sauces in our country, garlic sauce. Author of some appreciated volumes of gastronomic anthropology, Radu Anton Roman offers us in his books the basic recipe of mujdei - from garlic, water, salt - he draws our attention to the fact that, if we add a spoonful of oil and a drop of dill, we have already passed in Oltenia, and if we put "a glass of sour cream, a tablespoon of apple cider vinegar, a teaspoon of honey and some well-chopped tarragon, fresh or in vinegar" over the garlic paste, we are already in the heart of Transylvania.

The recipe for garlic sauce with cream went smoothly beyond the Carpathians, and the ingredients were a bit adapted (either for the simple reason that tarragon is not so used in the south or east). Let's discover the recipe for garlic sauce with cream step by step.

Ingredients

To prepare this type of garlic sauce that goes perfectly with fried fish and polenta, grilled vegetables, grilled or fried in a pan we need:

  • 1 head of garlic
  • ½ teaspoon salt (preferably coarse)
  • 1 tablespoon sunflower oil
  • ½ teaspoon of lemon juice or apple cider vinegar
  • 3 tablespoons cream with at least 20% fat

Optionally we can add any aromatic herbs that combine well with the preparation next to which we serve the sauce: tarragon for lamb, anise with white fish or chicken, parsley or fresh thyme for pork steak.

Method of preparation

Peel the garlic, then pass it through the garlic press. The pasta we get is rubbed with coarse salt with a spoon. Gradually add the lemon juice and oil and continue mixing until the garlic has the consistency of a mayonnaise. Gradually add the cream, and at the end add the greens - if desired.

  3. While stirring, add the egg and spices (mustard, salt, pepper).
  4. Continue to mix and add the oil to get the mayonnaise texture.
  5. Pour the sauce into a saucepan and serve with biscuits, fresh or toast, celery, carrots, etc.
