Hungry Boys' Casserole

Heat oven to 425 degrees F Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, baking powder and 1/2 teaspoon salt; mix well. With pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Gradually stir in enough milk until mixture leaves sides of bowl and forms a soft, moist dough.

On floured surface, gently knead dough 8 times. Roll dough to 1/4-inch thickness. Cut with floured 2 1/2-inch doughnut cutter. Reserve dough centers. Reroll dough to cut additional biscuits.

Reserve 1/2 cup of beef mixture. Pour remaining hot beef mixture into ungreased 13x9-inch (3-quart) glass baking dish. Arrange biscuits without centers over hot beef mixture. Stir olives and almonds into reserved 1/2 cup beef mixture; spoon into center of each biscuit. Top each with biscuit centers.

Bake at 425 degrees F for 15 to 25 minutes or until biscuits are golden brown.

1 1/2 lbs. ground beef
1 cup sliced celery
1/2 cup chopped onion
1/2 cup chopped green pepper and
1 clove garlic, minced

Cook until vegetables are tender drain.

3/4 cup water
3/4 cup (6-oz can) tomato paste
1/2 teaspoon monosodium glutamate
1 teaspoon salt
1 teaspoon paprika

Reserve 1 cup for Biscuits.

Add 1 can (1 lb) pork and beans, undrained, and
1 can (1 lb) chick peas or lima beans, undrained.

Simmer while preparing Biscuits.

Sift together into mixing bowl:

1 1/2 c. sifted all purpose flour
2 tsp. double action baking powder
1/2 tsp. salt

Cut in 1/4 cup butter until particles are fine.

Combine 1/2 cup milk and 4 drops yellow food coloring, if desired.

Add to flour mixture. Stir until dough clings together.

Knead-on lightly floured surface 12 times.

Roll out to 12࡯ rectangle

1/2 c. sliced pimiento-stuffed olives
1/4 c. blanched slivered almonds and the reserve meat mixture. Spread over dough. Roll up starting with 12 inch side seal edge. Cut into 1-inch pieces.

Turn – meat mixture into 12࡮ or 13࡯ inch baking dish top with biscuits.
