  • 8 rashers streaky bacon
  • 125ml maple syrup
  • 5 tablespoons peanut butter
  • 1 teaspoon vanilla extract
  • 125g plain flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons caster sugar
  • 1/2 teaspoon salt
  • 250ml buttermilk
  • 1 egg
  • 1 tablespoon olive oil
  • 1 tablespoon melted butter, or as needed

  1. Preheat oven to 220 C / Gas 7. Line a baking tray with aluminium foil. Arrange bacon on the prepared baking tray.
  2. Bake in the preheated oven until browned and crisp, about 15 minutes; drain on a kitchen paper-lined plate.
  3. Combine maple syrup, peanut butter and vanilla extract in a small saucepan over medium-high heat; cook and stir until sauce is smooth and heated through, about 5 minutes. Reduce heat to low and keep sauce warm.
  4. Whisk flour, baking powder, sugar and salt together in a large bowl. Whisk buttermilk, egg and olive oil together in a separate bowl; slowly pour into flour mixture and whisk until batter is smooth.
  5. Heat a griddle over medium heat; spread melted butter on surface to coat. Arrange bacon about 5cm apart on the hot griddle, working in batches if needed.
  6. Slowly pour batter over each bacon rasher; cook until bubbles start to form on top and edges are dry, 2 to 3 minutes. Flip pancakes and cook until other side is golden brown, 3 to 4 minutes. Serve with warm peanut-maple sauce.

I'm giving this 5 stars for one reason: my kids LOVED it. They thought the pancakes and bacon together was awesome, and they loved the syrup/sauce. If I were to rate this for the adults in my family, it would be a 4-star recipe. It was good, but nothing special. I'd just as soon eat my bacon on the side. The only modifications I made were: 1) I added a little extra flour to the batter because I thought it was too runny, and 2) I cut the long bacon strips in have and made regular round pancakes around each. Thanks for the fun idea.-21 Jun 2014

I just made this for everyone this morning and everyone really enjoyed it. I did, however, add a wee bit more flour (as another reviewer suggested). We really liked the syrupy peanut buttery sauce - yummy! For the person who gave this recipe 5 stars without even trying it YOU SHOULD BE ASHAMED OF YOURSELF. It's not fair for you to give a rating/review when you haven't even made the recipe.-10 Aug 2014
